How do I track flower yields in stems?

Set the flower’s harvest unit to stems once, and every planting shows its harvest and revenue in stems, the way you sell.

In the menu, open Charts, then Crop yield, and click Add new chart item. Choose the flower, and a cultivar if its yield differs, then set the Harvest unit to stems, the Yield of one bed and the Price per unit.

New plantings take these values. To update the ones already in your season, open the row’s menu, click Apply to existing plantings, then Apply.
