If I uncheck a harvest task, are my harvests undone?

No. Checking off a harvest task records every customer’s share of that day as harvested, but unchecking it later leaves them recorded.

To undo one, go to Weekly Harvests, click the state button next to the quantity and choose Set as not harvested.
