What do yellow quantities mean in Weekly Harvests?

It is Heirloom warning you before you promise more than you have: your customers’ quantities for that planting add up to more than its Availability that week.

Hover over the yellow cell to compare the two. Then lower a quantity, move part of it to another planting, or correct the availability if the bed really has more.
